The optimal range for storing and/or transporting fresh seafood is between -1˚C and +5˚C. The rate of deterioration compounds as the product temperature increases. This means, for example, that seafood stored at 4˚C will deteriorate twice as fast as seafood stored at 0˚C. The rate of deterioration increases dramatically with an increase in temperature, meaning higher temperatures reduce shelf life and freshness.
