Fresh and frozen seafood products must remain sufficiently refrigerated from the catch to the despatch and right up until they’re ready to be cooked. In Australia, especially in Spring and Summer, the demand for seafood increases dramatically with many Australians enjoying seafood on a hot Christmas day. Spoilage can not only pose a safety risk for your consumers but can also lead to an increase in wastage, therefore it is key that your business maintains the highest level of refrigeration standards. Amertec designs and supplies a range of energy efficient cooling and freezing solutions aimed at maintaining high-quality seafood products.
Controlling and maintaining temperature is essential to ensuring the superior standard of the end product. For a consumer point of view, fresh seafood is key to quality and taste of the product. For a supplier and buyer point of view, a high standard of refrigeration maintains the freshness and shelf life of the seafood, thus reducing spoilage and maintaining the company’s reputation.
Fresh or wet seafood begins to deteriorate as soon as it is caught and harvested. The rate at which deterioration occurs is determined by temperature, with temperature accuracy playing a key role in maintaining the freshness of the product.
‘The primary cause of seafood spoilage is when products are stored at too warm a temperature. Therefore, making sure that seafood is kept at the optimal temperature is crucial in ensuring superior product quality, freshness and maximum shelf life.’ – Seafood Handling Guidelines © 2013 Sydney Fish Market Pty Ltd.
The optimal range for storing and/or transporting fresh seafood is between -1˚C and +5˚C. The rate of deterioration compounds as the product temperature increases. This means, for example, that seafood stored at 4˚C will deteriorate twice as fast as seafood stored at 0˚C. The rate of deterioration increases dramatically with an increase in temperature, meaning higher temperatures reduce shelf life and freshness. This is illustrated in graph 1.1 above from the Seafood Handling Guidelines © 2013 Sydney Fish Market Pty Ltd.
